What exactly is miso made of?

The basic ingredients of miso are soybeans, salt and a fermentation agent called koji. Depending on the variety, koji is combined with rice, barley or other grains.
Weeks or months of fermentation create a paste that not only adds flavor, but also contains lots of good bacteria - a real ferment powerhouse!


What types of miso are there?

There are many varieties, but the three most important are

- Shiro miso (white miso): mild, slightly sweet, short fermentation - ideal for light sauces, soups or dressings
